Highland Park 56 is not only the oldest whisky Highland Park has ever created, but also one of the rarest. Created from a never-before tasted sherry-seasoned cask containing whisky first laid down in 1968, this is a truly remarkable whisky reflecting more than five decades of Highland Park craftsmanship with an intensely perfumed, beautifully complex flavour infused with the unmistakable essence of Orkney heathered peat.
The flavour
This is a perfumed, complex whisky with enormous depth and distinctive Orkney character. On the nose, you’ll get aromas of jasmine, sweet raisins, cloudy honey and delicate peat smoke, while on the palate you’ll find notes of citrus and orange peel as well as spices and a hint of lapsang souchong tea. The finish is exceptionally subtle, mixing woody spice with honeyed oak and fragrant heathered peat smoke.
The craft
In 2008 Gordon Motion selected ten special casks, first laid down in 1968, that contained whiskies of an unusual flavour profile—both complex and intriguingly ethereal—that showed potential for further ageing. To further develop the flavour of each of these casks, he decided to marry and re-rack them in a series of first-fill sherry-seasoned Oak casks. The 56 is made entirely from one of these casks, a never-before-tasted, sherry-seasoned, first-fill American Oak Puncheon that became ready for bottling in 2024.
The stories
The presentation box and decanter of the 56 are inspired by the ways in which Orkney’s inhabitants have made their mark on the islands’ landscape, and, more specifically, the Standing Stones of Stenness, one of Orkney’s most dramatic neolithic monuments. These stones, created over 5,000 years ago, are an enduring symbol of Orkney’s creative past, present and future—and the heritage of craft that inspires the creation of all our oldest and rarest whiskies.
