"In 2021 Ukiyo Spirits Co launched its Ukiyo Japanese Yuzu Gin. This gin comes from the Kagoshima region, the southernmost tip of the Japanese main island. The Sakurajima volcano is also located in this region, the source of inspiration behind the bottle. The top of the bottle reflects this volcano.
To arrive at the Ukiyo Japanese Yuzu Gin, juniper berries, Sakurajima komikan, coriander and an infusion of spicy yuzu are used. The yuzu is a local Japanese citrus fruit. This fruit has a citrusy, medium tart flavor that can best be described as a mix of lemon, orange and grapefruit.
The juniper berry in this gin provides a complex flavor profile of pine, herbs, roses and citrus fruits.
The Sakurajima komikan is a smaller variety of the mandarin; it is said to be even the smallest in the world! This botanical is grown on the soil of the active volcano Sakurajimi. Some trees have been here for over a century and can produce as many as 2,000 Sakurajima komikans. Much attention is paid to the trees and care is taken to ensure that the Sakurajima komikans are harvested at a uniform size. The skin of the fruits is thick and has a fresh scent. The taste is similar to the sweet taste of citrus fruits.
Coriander completes the picture with its clear flavor profile, notes of orange with lemongrass and spicier notes of pepper and ginger in the background.
It is the production method that makes these gins so special. A hundred-year-old distilling tradition is followed and locally grown barley is used to which black Kōji is added.
Black Kōji is a type of fungus that releases strong enzymes. They then convert the starch, resulting in a true umami flavor explosion. You will also find Kōji in miso, soy sauce and sake.
The mixture of barley and black Kōji is then fermented, after which the distillation takes place in a traditional Japanese pot still and Shōchū is created. This is a typical Japanese distillate that is very powerful. The botanicals are then added to the Shōchū, resulting in Ukiyo Japanese Yuzu Gin!
Both in smell and taste, the fresh citrus notes of the juniper, yuzu, bitter orange and coriander emerge. In terms of taste, they are assisted in the background by hints of pine, lavender and Matcha tea.
The alcohol percentage is at 40%; this percentage provides the perfect balance.
