Long, warming and beautifully layered. Waves of sandalwood, cedar and incense linger with nutmeg, ginger and a touch of black tea. A final echo of dried apricot and coconut fades slowly, inviting another sip.

Given its complexity, this Yamazaki 18 is at its best when you take your time. Start neat in a tulip-shaped glass, then add a few drops of still water to explore the incense and fruit notes more deeply. Avoid too much ice; chilling will mute the delicate Mizunara character.

For food pairings, think subtle and umami-driven rather than heavy or overly sweet. Grilled scallops with soy-butter, lightly smoked salmon, aged Comté or a simple plate of dark chocolate and roasted nuts all work beautifully. For a Japanese touch, roasted matcha-salted almonds or wagashi-style sweets can create a surprising harmony.
