"Hillside. Founded in 1898 by the unforgettably named Septimus Parsonage, this now-silent distillery was known for its unusually large stills. More recently called Glen Esk, it produced as Hillside from 1965-1980. To enjoy this warm gold 25 year old cask-strength single malt at its best, measure one part whisky to two parts still water at room temperature. Any slight cloudiness is normal in an unfiltered cask-strength malt. On tasting, woody aromas introduce a smooth body, hints of pear on the sweetly fruity palate and a toasted, dry finish."
